Maple Chicken


Take the thighs (or any other kind of chicken, I used leg quarters since we had some around). Cut up one onion, three potatoes (can use sweet potatoes too) in one inch chunks. Put the cubed veggies in a foil covered shallow pan along with baby carrots (or sliced ones). Salt and pepper them and stir them around. Salt and pepper both side of the chicken and put it down into the veggies. Then drizzle 1/4 C. maple syrup over everything. Bake at 450 degrees. When the first side gets browned turn the chicken over and stir the veggies around a bit and bake until the juices are clear.
